Curried Apricot Vegetable Medley

Ingredients
- 2 cups chicken or vegetable broth
- 8 ounces (1/2 medium bunch) fresh broccoli spears
- 8 ounces (1 1/2 cups) fresh cauliflowerets
- 1/2 cup red bell pepper strips
- 1/2 cup carrots, chopped
- 1/4 pound fresh mushrooms, quartered
- 1/4 cup plain yogurt
- 1/4 cup Smucker's® Low Sugar Reduced Sugar Apricot Preserves
- 1/2 teaspoon Lemon juice
- 1/4 teaspoon curry powder
- 1/8 teaspoon Salt
Directions
- Step 1
HEAT broth in large saucepan over medium high heat. Add broccoli, cauliflower, red pepper, carrots and mushrooms. Cover and cook until broccoli is crisp-tender, about 5 minutes. Drain.
- Step 2
Try sauce cold as a fruit dip; stir together sauce ingredients and refrigerate. It's especially delicious with banana slices.
- Step 3
COMBINE remaining ingredients in small saucepan. Cook and stir until sauce is heated to serving temperature. Pour over vegetables.
